The 5-Minute Dinner
For nights when dinner needs to be easy, simple, nourishing and loved by the whole family. Eggs, buttery toast and avocado make a lovely combination on their own, but adding Little & Often adds another layer of nourishment to this meal.
INGREDIENTS
- 4 eggs
- 1 tbsp butter
- 2 slices sourdough or your favourite toast
- 1 ripe avocado
- 1 handful baby spinach (optional)
- 1–2 tsp Original Blend or Little Spice
- Squeeze of lemon
- Salt & black pepper (optional)
Cooking Instructions
- Toast the bread.
- Mash the avocado with a squeeze of lemon, a little salt and blend of choice.
- Melt the butter in a pan over low heat. Whisk the eggs, pour them in and gently fold with a spatula until soft and creamy.
- Add the spinach to the warm pan for the final 30 seconds, just until wilted (optional).
- Pile the avocado onto the toast, followed by the scrambled eggs and greens.
- Finish with a generous sprinkle of Original Blend (or Little Spice also works well here) and, if you're anything like us, another little dollop of butter.

We love meals like this because they don't need much. A few simple ingredients, something nourishing in the pantry and five minutes is often all you need to put a proper meal on the table.
