Family Bolognese

Family Bolognese

A proper family staple. Rich, tomatoey beef sauce with plenty of vegetables blended right in, plus a generous spoonful of Little & Often Original.

INGREDIENTS

  • 500g beef mince
  • 1 onion, finely diced
  • 2 cloves garlic, crushed
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 red capsicum, finely diced
  • 1 bottle of passata
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1–2 tbsp Little & Often Original
  • 250ml beef or vegetable stock
  • 400–500g pasta
  • Olive oil
  • Salt & pepper

Cooking Instructions

  1. Heat a splash of coconut oil/ghee in a large frying pan or pot. Add the onion and cook for 2–3 minutes.
  2. Add the garlic and beef mince. Cook, breaking the mince up, until browned.
  3. Add the carrot, zucchini and capsicum. Cook for another 3–4 minutes until beginning to soften.
  4. Stir through the tomato paste, oregano, basil and Little & Often Original.
  5. Add the passata and stock. Stir well and bring to a gentle simmer.
  6. Reduce the heat and let it bubble away for 15–20 minutes. The vegetables will soften into the sauce and the flavour will deepen.
  7. Meanwhile, cook the pasta according to the packet instructions. Drain the pasta.
  8. Stir the pasta through the sauce. Serve with an extra sprinkle of Little & Often Original.
