Family Bolognese
A proper family staple. Rich, tomatoey beef sauce with plenty of vegetables blended right in, plus a generous spoonful of Little & Often Original.
INGREDIENTS
- 500g beef mince
- 1 onion, finely diced
- 2 cloves garlic, crushed
- 1 carrot, grated
- 1 zucchini, grated
- 1 red capsicum, finely diced
- 1 bottle of passata
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1–2 tbsp Little & Often Original
- 250ml beef or vegetable stock
- 400–500g pasta
- Olive oil
- Salt & pepper
Cooking Instructions
- Heat a splash of coconut oil/ghee in a large frying pan or pot. Add the onion and cook for 2–3 minutes.
- Add the garlic and beef mince. Cook, breaking the mince up, until browned.
- Add the carrot, zucchini and capsicum. Cook for another 3–4 minutes until beginning to soften.
- Stir through the tomato paste, oregano, basil and Little & Often Original.
- Add the passata and stock. Stir well and bring to a gentle simmer.
- Reduce the heat and let it bubble away for 15–20 minutes. The vegetables will soften into the sauce and the flavour will deepen.
- Meanwhile, cook the pasta according to the packet instructions. Drain the pasta.
- Stir the pasta through the sauce. Serve with an extra sprinkle of Little & Often Original.
